Honey Zucchini Bread

One of the best recipes I have ever tried for Zucchini Bread.

Ingredients

  • 3 eggs, beaten
  • 1 C. vegetable oil
  • 3/4 C. Sue Bee Honey
  • 2 C. sugar
  • 2 tsp. vanilla
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 Tbs. cinnamon
  • 3 C. flour
  • 2 C. shredded zucchini
  • 1/2 C. walnuts

Directions

Mix the wet ingredients and sugar.  Sift dry ingredients together and stir into wet mixture.  Add chopped nuts.  Pour into a greased and floured 9x13 inch loaf pan or two smaller loaf pans.  Bake 60 – 75 minutes at 350 degrees.  An inserted toothpick in the center should come out clean if the bread is done.

  • I don't consider this healthy with all the sugar and honey. You can easily reduce the sugar and honey in half and it would still be tasty and not so sweet. When you consider how much zucchini you are getting per serving, it is so miniscule that you could not consider it even one serving of a vegetable. How bout something really healthy next time??
