Horseradish Cheddar Dip

This creamy dip is always a hit at parties. It's a cheesy appetizer with a kick.

  • 8 oz. sharp cheddar cheese, finely shredded (about 3 C.), at room temperature
  • 1/4 C. sour cream or yogurt cheese
  • 2 Tbs. unsalted butter, at room temperature
  • 1/2 C. prepared horseradish (without sugar)
  • 1 Tbs. of fresh lemon juice
  • Chopped fresh Italian parsley or cilantro leaves for garnish

Place the cheese, sour cream and butter in a food processor and process until smooth. Add the horseradish and lemon juice and process until incorporated. Transfer to a serving bowl and serve immediately, garnished with parsley, or cover and refrigerate for up to 2 weeks. If refrigerated, let soften before serving.

Yield: about 2 C. or 16 servings
