- 2 tablespoons of Dijon mustard
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 3-3.5 pound beef tenderloin roast
- 5 tablespoons of olive oil
- 1 pound freshly grated horseradish

Preheat the oven to 400 degrees F. Rub the mix of salt and pepper into the beef tenderloin before browning in a large skillet with the olive oil for about 10 minutes. Remove the meat and allow it to cool before adding the rub of horseradish and Dijon mustard. Finish roasting in the oven for 35-40 minutes or until the internal temperature reaches 120 degrees F.
