  • ½ stick butter, unsalted
  • ¼ C. flour
  • Salt and pepper to taste
  • 1 tsp. dried parsley
  • 1 tsp. dried thyme
  • 3 C. milk
  • 6-8 potatoes, peeled and thinly sliced
  • 1 onion, diced
  • 1 C. ham, cooked and chopped
  • ½ C. cheddar cheese

In a saucepan, melt butter and stir in flour, salt, pepper, parsley, thyme, and milk. Simmer for 3 to 4 minutes. In a greased baking dish, combine potatoes, onion, and ham. Slowly pour milk mixture over potatoes and top with cheddar cheese. Bake covered for an hour and uncovered for an additional 20 minutes.
