  • 3 Potatoes
  • pepperoni
  • 1 tsp. chili powder
  • 1 Tbs. red pepper flakes
  • 1 tsp. paprika
  • Tabasco sauce
  • salt
  • pepper
  • cheese (optional)

Boil or heat potatoes in microwave until soft. Chop potatoes into bite size chunks and let sit. Chop pepperoni into small snips. The amount of pepperoni used is up to you. Put chopped potatoes and pepperoni in an oiled, black iron pan. On medium-high heat, let potatoes and pepperoni cook until light brown, flipping and stirring them as necessary. After browning, add chili powder, pepper flakes and paprika. Let cook for about 3-4 minutes and add salt and pepper to taste. Cover pan and let cook for another 5 minutes. Uncover pan and taste for heat. If it isn't hot enough, add Tabasco sauce to suit your heat preference. If desired, shred some sort of cheese on top of the potatoes before serving.
