Hot Artichoke-Parmesan Spread

Served with crackers or crusty bread, this spread is a creamy appetizer that goes very quickly!

Ingredients

  • 14 oz. artichoke hearts, drained
  • 1 C. grated parmesan cheese
  • 1/4 C. mayonnaise
  • 1 clove minced garlic
  • 1 tsp. grated lemon rind
  • 1/8 tsp. cayenne pepper
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbs. grated Parmesan cheese

Directions

Preheat oven to 350 degrees. In a food processor, combine artichoke hearts, 1 C. Parmesan cheese, mayonnaise, garlic, lemon rind and cayenne pepper. Process until smooth; season with salt and pepper. Spread in an even layer in a small baking dish. Sprinkle with 1 Tbs. parmesan cheese and bake for 15 minutes, or until the top is golden.
