Hot Chicken Salad
Ingredients
- 6 lb. cooked chicken
- 4 lb. celery, diced
- 3 oz. onion, chopped
- 1 lb. almonds, browned and
- chopped
- 3/4 c. lemon juice
- 3 Tbs. lemon rind, grated
- 1 tsp. white pepper
- 1 Tbs. salt
- 1 1/2 qt. mayonnaise
- 3 lb. Cheddar cheese, grated
- potato chips, crushed
Directions
Dice chicken. Combine celery, onion, almonds, lemon juice, lemon rind, pepper, salt and mayonnaise with chicken. Mix lightly. Place in 2 pans (or in individual casseroles). Sprinkle cheese, then potato chips over top of salad mix. Bake at 350 degrees for 25 to 30 minutes. Yields 2 pans, 12 x 20 x 2-inches.
