Hot Chicken Salad

Baked in the oven with almonds, onion, and lemon, to name a few

Ingredients

  • 6 lb. cooked chicken
  • 4 lb. celery, diced
  • 3 oz. onion, chopped
  • 1 lb. almonds, browned and
  • chopped
  • 3/4 c. lemon juice
  • 3 Tbs. lemon rind, grated
  • 1 tsp. white pepper
  • 1 Tbs. salt
  • 1 1/2 qt. mayonnaise
  • 3 lb. Cheddar cheese, grated
  • potato chips, crushed

Directions

Dice chicken. Combine celery, onion, almonds, lemon juice, lemon rind, pepper, salt and mayonnaise with chicken. Mix lightly. Place in 2 pans (or in individual casseroles). Sprinkle cheese, then potato chips over top of salad mix. Bake at 350 degrees for 25 to 30 minutes. Yields 2 pans, 12 x 20 x 2-inches.
