  • 1 large egg
  • 2 ¼ cups of milk
  • 2/3 cups of sugar
  • 1/8 teaspoon of salt
  • 2/3 cups of unsweetened cocoa powder
  • 2 tablespoons of cornstarch
  • 1 teaspoon of vanilla extract
  • Dark chocolate powder, garnish
  • Small marshmallows, garnish

In a small mixing bowl, lightly beat the egg.
In a medium saucepan, combine the 1 ½ cup of milk, 1/3 cup of sugar, and salt and bring to a simmer in medium. Be sure to stir sporadically.
In a separate mixing bowl, mix together the remaining sugar, the cocoa powder, and corn starch with a whisk. Slowly incorporate the remaining the milk to the mixture until it is nicely blended.
Pour the mixture into the pan and bring it to a simmer over medium heat. Continue to stir until it appears thickly and glossy. Remove it from the heat and let it cool for a couple minutes.
Whisk about 1 cup of the hot cocoa mixture into the beaten egg. Pour the mixture back into the saucepan and simmer over medium-low heat. Be sure to whisk constantly. Add in the vanilla to the hot cocoa mixture.
Place the hot cocoa pudding into a bowl and garnish with dark chocolate powder and small marshmallows.
