Hot Corn Salad
Ingredients
- 6 ears corn off the cob or 1 bag frozen corn
- 1 large onion, diced
- 1 medium green pepper, diced
- 1 Tbs. wet crushed pepper
- 1 tsp. chopped garlic
- Salt
- Pepper
- 2 Tbs. olive oil
- 4 Tbs. butter
- 1/2 tsp. basil
Directions
Saute onions and green pepper in olive oil until tender, about 3-4 minutes. Add butter garlic, crushed pepper, corn, salt and pepper. Simmer until corn is cooked. Add basil. Serve as a side dish or serve on a bed of greens for a veggie dinner.
