Ingredients
- 4 C. apples, cored, peeled, and diced
- 2 eggs
- 2 C. sugar
- 2 C. all-purpose flour
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- Dash salt
- 1 tsp. baking soda
- ¾ C. vegetable oil
- 2 tsp. vanilla extract
- Prepared simple icing
- Hot maple syrup

Preheat oven to 350 degrees. In a large bowl, use an electric mixer to beat eggs and sugar. Pour in flour, cinnamon, nutmeg, salt, baking soda, vegetable oil, and vanilla; mix until smooth. Fold in apples as transfer batter into a greased baking dish. Bake for 50 minutes to 1 hour until golden. Drizzle icing on top and serve with hot maple syrup!
