  • 16 oz. Can tomatoes (cut up)
  • 10 oz. Can enchilada sauce
  • 1/4 C. Sliced pitted ripe olives
  • 1/4 tsp. Salt
  • 2 C. Ground Meat Mix*
  • 6 oz. American cheese (shredded)
  • 1 C. Cream style cottage cheese
  • 1 Egg (slightly beaten)
  • 8 oz. Package tortilla chips (slightly crushed)

In a medium size saucepan, combine undrained tomatoes, enchilada sauce, sliced olives, and salt. Add Ground Meat Mix*; simmer, covered for 20 minutes, stirring occasionally. Reserve 1/2 cup shredded cheese for topping; set aside. Stir cottage cheese and egg into remaining shredded cheese. Spread half of the meat mixture in a 12 x 7 1/2 x 2 inch baking dish. Top with half the cheese mixture and half the tortilla chips. Repeat layers, ending with tortilla chips. Bake in a 350 F oven for 25 minutes. Sprinkle the reserved 1/2 cup shredded cheese over top and return to oven for about 5 minutes until cheese melts. Let stand 5 minutes before serving. *Ground Meat Mix recipe located in this program
