Hot Pink Gelato

- 8 C. raspberries, frozena and slightly thawed
- 2 3/4 C. cashews, ground
- 1 1/4 C. maple syrup
- pinch salt
Puree the ingredients in a blender until creamy and smooth. It's okay if a few lumps remain. Dump the mix into a metal loaf pan and freeze for two hours.
After two hours, return the mixture to the blender with a splash of cold water and process further. Once creamy and smooth, return to the freezer and chill, covered, until ready to serve.
