  • Chicken nuggets:
  • 1 lb. boneless chicken breasts cut into chunks
  • 1 C. peanut oil
  • 1 C. dill pickle juice
  • 1 egg
  • 1 ½ C. milk
  • 1 ¼ C. flour
  • 1 T. sugar
  • Salt
  • Pepper
  • Honey mustard:
  • 1 T. mustard
  • 2. T. honey
  • 2 tsp. Dijon mustard
  • 2 tsp. lemon juice
  • ¼ C. mayonnaise

In a bowl, mix together the chicken, pickle juice and ½ C. milk. Let it sit for 30 minutes and drain well. Heat up the peanut oil in a skillet over a medium heat. In another bowl, mix together the remaining C. of milk and the egg. Add in the chicken and coat it. In another bowl add in the chicken, flour, sugar, pepper, and salt. Add the chicken to the skillet and let it cook until the chicken is crispy. For the honey mustard mix all of the ingredients together. Serve immediately and enjoy.
