  • Pastry:
  • 2 ½ C. flour
  • 1 tsp. salt
  • 18 T. butter, cut
  • Filling:
  • 2 lb. concord grapes, stemmed
  • 2 T. quick-cooking tapioca
  • 1 C. sugar

Preheat the oven to 400 degrees. For the pastry mix together the flour and salt. Work the butter into the flour mixture. Sprinkle in 10 T. of ice water and begin to stir. Do this until the pasty becomes hard. Smooth it out and divide the dough into 2 balls, wrap them up, and place them into the fridge for 2 hours. For the filling start off by removing the skin from the grapes and set them aside. The skins and the pulp should be in two different bowls. Cook the pulp over a medium heat for 10 minutes and place them into the bowl of skins. Let it cool. Once at a room temperature stir in the sugar and tapioca. Roll out the dough balls. Fill out the bottom of a pie plate with one. Pour in the filling. Use the other dough to cover up the pie. Let it bake for 20 minutes. Lower the heat to 350 degrees and let it cook for another 45-50 minutes. Serve and enjoy.
