  • 8 slices of precooked bacon, chopped
  • 2 T. olive oil
  • 2 cloves garlic, minced
  • 1 1/2 tsp. thyme, minced
  • 2 T. flour
  • 1 onion, minced
  • 3 scallions, chopped
  • 6 potatoes, peeled and cut
  • 2 C. cheddar cheese, shredded
  • 4 C. chicken broth
  • ½ C. heavy cream
  • Salt
  • Pepper

In a skillet cook the onion, garlic, and thyme in the olive oil. Let them become caramelized. Mix in the flour and cook it for a minute. Slowly mix in 1 C. of chicken broth. Once the mixture is stirred transfer the mixture into the crockpot. Mix in the rest of the chicken broth and potatoes. Let it cook for 3-4 hours on a high setting. Use a potato masher to mash up the soup. Add in the cream and cheddar cheese. Once it is ready serve with cheddar cheese, bacon, and scallions.
