Potatoes, eggs, onion, and green pepper make this a hearty breakfast dish.

Ingredients

  • 1/4 C. shortening
  • 4 medium potatoes, sliced
  • 1 medium onion, chopped,
  • 1/2 green pepper, chopped
  • 4 eggs

Directions

Melt shortening in a skillet. Add potatoes, onion and green pepper. Cook until done. Beat eggs in a small bowl, then add to potato mixture, stirring until all eggs are done. Add salt and pepper as desired.
