Although this dish is also a name of a 1991 movie, fried green tomatoes are delicious side to any dinner, especially with grilled summer meals. They are simple to fry up and are super crunchy with a soft inside

  • 2 green tomatoes
  • ¾ C. panko bread crumbs (regular or gluten free)
  • 2 pinches salt
  • 2 pinches black pepper
  • ½ C. vegetable oil
  • 1 C. flour (regular or gluten free)

Slice the tomatoes 1/8 inch thick. Sprinkle salt and pepper onto both sides of the tomato. On one plate, pour the flour on. Pour the panko bread crumbs onto a second plate. Drudge the tomatoes into the flour on both sides then in the panko bread crumbs. In a frying pan, drizzle in the vegetable oil. Place the tomatoes in, do not overlap, and cook on a medium-high heat. Turn over when one side is golden brown and continue to cook until other side is golden brown. Once both sides are browned place on a plate lined with paper towel. It is an excellent side with grilled or oven-cooked chicken.
