Ingredients

  • 1 ¼ C. flour
  • 1 ¼ C. buttermilk (or whole milk)
  • ¼ C. granulated sugar
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • 4 Tbs. butter, melted
  • 3 Tbs. pumpkin puree
  • 1 tsp. fresh lemon juice
  • ¼ tsp. cinnamon
  • ¼ tsp. nutmeg
  • ¼ tsp. allspice
  • ¼ tsp. salt
  • ¼ tsp. vanilla extract
  • 2 eggs

Directions

Combine the flour, baking soda/ powder, salt, cinnamon, nutmeg, allspice and sugar; mix well. Add in the eggs, butter, puree, buttermilk, and lemon juice. Heat a griddle or large skillet on medium-high heat. Lightly spray or butter the griddle/skillet. Pour a ¼ cup of the batter for one pancake. Flip once it bubbles up and is brown on the side-down. Serve with warm butter and syrup.
