Begin by cutting your chicken into pieces that will easily fit onto your skewers and placing those pieces into a resealable bag. Whisk the rest of the ingredients -- the lime juice, soy sauce, olive oil, garlic, cilantro, salt, and pepper -- in a bowl until they’re evenly combined. Remember to separate some of the mixture (around ¼ of a cup) and keep it in the fridge until it’s time for you to grill!

Pour the rest of your mixture into the bag with your chicken and seal it tightly so that it doesn’t spill. While that marinates in the fridge for at least an hour, soak your wooden skewers in water for at least 20 minutes so that they don’t ignite while you’re grilling and ruin the barbecue for everyone. Place them on a paper towel to dry a bit before you put your chicken on them!

After your chicken has finished marinating, push a few pieces into the center of the skewer, making sure to leave enough room on both ends to hold it with your hands while you eat. Place the skewers on the grill over a medium-high heat and after a few minutes, spread the remaining marinade on one side and flip it to finish cooking. (Don’t spread the mix on both the cooked and uncooked side to avoid cross-contamination).
