Curry is not as difficult as it may seem. This simple and delicious dish has just the right amount of spice, but a whole lot of flavor. The curry will taste great with any meat or vegetable of your choice too!

  • 5 tuna fillets
  • 1 cup of vegetable broth
  • ¾ cup of yellow onion, diced
  • ½ cup of tomato, diced
  • 2 tablespoon of cashews
  • 1 tablespoon of olive oil
  • 1 teaspoon of chili pepper flakes
  • 1 teaspoon of cumin
  • 1 teaspoon of brown sugar
  • ½ teaspoon of fresh ginger, grated
  • ½ teaspoon of coriander
  • Salt and pepper, to taste

In a large skillet over medium heat, sauté the onion, garlic, tomato, and cashews for seven minutes. Transfer to a blender with vegetable broth, olive oil, chili pepper flakes, cumin, brown sugar, coriander, salt and pepper, and puree until the mixture is smooth. In the same skillet, sauté the tuna filets until slightly brown and add the chicken broth, curry paste and bay leaf. Let the curry simmer for at least 20 minutes to allow the flavor to infuse with the fish. Serve with long grain rice and naan bread. Enjoy!
