  • 1 cups butter, softened
  • ½ cup of any flavor ice cream, softened
  • 1 cup of all-purpose flour
  • 1 tablespoons sugar
  • 1 to 2 tablespoons confectioners' sugar
  • ½ a cup of any flavored fruit filling

In the bowl, beat the butter and ice cream, flour and sugar until everything is blended well.
Divide the dough into four portions; cover and refrigerate for 2 hours or until the dough is easy to handle.
Preheat oven to 350 degrees
On a lightly floured surface, roll one portion of dough into a 12–in. x 10–in. rectangle and then cut into 2-in. squares. Overlap two opposite corners of dough over filling and pinch tightly to seal. Then place them 2 inches. apart on ungreased baking sheets. Repeat with the remaining dough and filling.
Bake at 350 for 11-14 minutes or until bottoms are lightly browned. Take them out of the oven and let them cool for 1 minute. Then add confectioners' sugar and serve.
