  • 1 T. olive oil
  • 2 cloves garlic, minced
  • 1 yellow onion, diced
  • 1 green bell pepper, diced, divided
  • 1 zucchini, diced
  • 1 cup corn kernels, frozen, canned, divided
  • 1 (14.5-ounce) can petite diced tomatoes, undrained, divided
  • 1 cup cooked white rice
  • 1 can refried beans
  • 1 tsp. chili powder
  • 1/2 teaspoon cumin
  • sea salt
  • ground black pepper
  • 1 C. shredded mozzarella cheese, divided
  • 2 T. chopped fresh cilantro

Directions

Preheat your oven to 400 degrees F. Take out a baking dish and add the oil to the bottom of it. Mix together the garlic, onion, zucchini, white rice, refried beans, chili powder, cumin, salt, pepper, cilantro, and the majority of the green bell pepper, tomatoes, corn, and mozzarella cheese. Evenly transfer this mixture into the baking dish. Top with the remaining green bell pepper, tomatoes, corn, and mozzarella cheese. Cover with foil and bake in your preheated oven for 20-25 minutes. Serve.
