Instant Apple Pie

Ingredients
- 3 1/4 C. walnuts
- 2 C. dates (or other soft fruit like figs or raisins)
- 5 C. apples, peeled and sliced
- 2 Tbs. cinnamon
- 3 Tbs. sugar
Directions
Combine 3 cups of nuts and fruit in food processor for about 50 seconds so it becomes a coarse ball (mixture should stick together when pushed between fingers). About 40 seconds. Press into a 9-inch tart pan or pie plate. Set in refrigerator while making the filling.
To make the filling, saute apples in skillet with sugar and cinnamon (no butter needed as apples will start to release their juices). Saute until soft, about 6 minutes. Add apple mixture into crust. Sprinkle with remaining 1/4 cup of walnuts. Can be served immediately, but it is better to let chill a bit so apple pectin can solidify cake.
