  • Macaroon Batter:
  • ¼ C. egg whites
  • ¼ C. sugar
  • 1 ¼ C. confectioner’s sugar
  • 4 oz. pistachios
  • Pinch of salt
  • Macaroon Filling:
  • ½ tsp. vanilla extract
  • 1 C. confectioner’s sugar
  • 1 ½ oz. pistachios
  • 6 T. butter, softened

Preheat the oven to 350 degrees. Line 2 cookie sheets with parchment paper. For the batter, process the pistachios, sugar and confectioner’s sugar. Set aside. In an electric bowl, combine the egg whites and the pinch of salt. Transfer mixture into a bag. Pipe the batter out onto the 2 prepared cookie sheets. Cover it up for an hour. Place into oven for 10 minutes. For the filing, process the confectioner’s sugar and pistachios. Add in the softened butter and mix. Add in the vanilla extract. Spread the filling onto half of the cookies. Top the covered cookies with the other half. Enjoy.
