  • 1/2 Tbs. butter
  • 6 slices bread, remove crusts
  • 1 lb. bulk sausage
  • 1 1/2 C. shredded Cheddar cheese
  • 6 eggs, beaten
  • 1 large onion, chopped
  • 2 C. milk
  • 1 tsp. salt
  • 1 C. mushrooms, chopped
  • 1 C. tomatoes, chopped

Spread butters on bread and place in 13-by-9-by-2-inch greased baking dish. Cook sausage on skillet over medium-low heat until brown. Saute onions and tomatoes. Pour over bread and sprinkle cheese on top. Mix eggs, milk and salt. Pour in casserole and top with more cheese. Cover casserole and chill overnight. Remove from fridge and bake at 350 degrees F for 45 minutes.
