Irish Crusted Fish

This fish makes a great St. Patrick's Day meal. It's a good change from corned beef and green beer.

  • 4 fish fillets (any white fish)
  • 1/2 C. breadcrumbs (unseasoned)
  • 2 Tbs. melted butter or margarine
  • 2 Tbs. fresh parsley
  • 2 tsp. spicy brown mustard
  • 2 tsp. minced spring onions
  • 6 oz. shredded cheddar cheese
  • 1 C. heavy cream

Preheat oven 375 degrees. Butter or spray a casserole dish. Place fish in dish, skin side down. In a bowl, mix breadcrumbs, butter, parsley, mustard and onions. Add cheese and mix well. Place on fish making a crust, pat it down. Pour the cream over all and bake until fish is flak and the top is bubbly brown, about 20 minutes.
