  • 2 russet potatoes, peeled and cut into large chunks
  • A pinch of salt for taste
  • 3 Tablespoons unsalted butter
  • 1 lightly packed cup of chopped kale
  • 1 ½ green onions, minced
  • 1 cup of milk
  • ¼ a cup of a knob of butter to serve in the potatoes

In a medium pot, add the potatoes and water covering an inch over the potatoes and bring this to a boil until the potatoes are fork tender (15 to 20 minutes). Then drain the potatoes in a colander.
In a pot over medium heat, melt the butter in the pot and once it's hot, add the greens. Then cook the greens for 3-4 minutes, or until they are wilted. Then add the green onions and cook for an additional minute.
Mash the potatoes with milk, and greens, and mix well.
Add salt to taste, the knob of butter and serve!
