Looking to make pancakes for St. Patrick’s day? These pancakes are better than the original breakfast pancakes! These are traditional potato pancakes, with a spoonful of sour cream and a sprinkle of green onions to top it off!

  • 4 cups of mashed potatoes
  • 3 eggs
  • ½ a cup of flour
  • A pinch of salt and pepper for taste
  • A pinch of garlic powder
  • A pinch of onion powder
  • A handful of chopped chives
  • oil for frying
  • sour cream for garnish

In a mixing bowl, add potatoes, egg, flour, salt, pepper, garlic powder and onion powder and mix well.
Preheat the skillet and add a couple tablespoons of oil to fry the batter.
Make sure that the batter is not too thin ad Pour 1/4 a cup of the batter into the hot pan. Brown the batter on both sides. Repeat this step until all the batter is gone.
Set the pancakes on a plate, add a spoonful of sour cream, sprinkle some chives and serve!
