Irish "Potatoes"
Ingredients
- 1 C. confectioner's sugar
- 1 C. shredded coconut
- 1 1/2 Tbs. cream
- 2 Tbs. ground cinnamon
Directions
Sprinkle the sugar on the coconut. Add the cream and mix gently. Take approximately 1/2 tablespoons of dough and roll into balls. Place cinnamon in a plastic bag and shake cookies in it, a few at a time, until coated.
Makes roughly two dozen cookies ("potatoes").
