  • 2 lb. stew meat
  • 1 T. flour
  • Salt and pepper to taste
  • 2 carrots cut into large pieces
  • 2 onions sliced finely
  • ½ tsp. garlic paste
  • 1 C. tomato paste
  • 1 tsp. Worcestershire sauce
  • 2 C. Irish stout
  • Fresh parsley chopped for garnishing

Preheat the oven to 180 degrees. In a medium bowl, mix the flour with salt and pepper. Pat the meat dry and dredge in seasoned flour. In a Dutch oven over high heat, tip in the beef and sauté until browed all over. Remove the beef and set aside. In the same pan, put in the onions and sauté gently until golden brown. Add the vegetables and sauté again until cooked through. Add the meat and to the pot and pour in the tomato paste, garlic paste, Worcestershire sauce, salt and pepper. Stir well and simmer until the mixture begins to boil. Now add the stout to the mixture and stir to combine. Transfer the pot to the oven and leave to simmer cook for 1 1/2 hours.
