Ingredients

  • 1 T. olive oil
  • 2 cloves garlic, minced
  • 1 yellow onion, diced
  • 1 (12.8 oz.) package andouille sausage, thinly sliced
  • 2 C. reduced-sodium chicken broth
  • 1 red bell pepper, diced, sliced
  • 1 yellow bell pepper, diced, sliced
  • 1/2 C. low-fat milk
  • 8 oz. fettuccine pasta
  • sea salt
  • ground black pepper
  • 1 C. shredded mozzarella cheese

Take out a large skillet and heat the oil over medium-high heat. Add the garlic, onion, and sausage, and then cook and stir the ingredients for about three minutes, which is when the sausage should be lightly browned. Stir in the chicken broth, peppers, milk, and pasta into the skillet. Season with salt and pepper according to your preference. Bring the ingredients to a boil and then cover, lower the heat, and let the pasta simmer for 12 minutes, or until cooked through. When finished, remove from heat and top with cheese. Cover for two minutes, or until the cheese has melted. Serve.
