Irresistible Roasted Potatoes

Ingredients

  • 2 lbs. all-purpose potatoes
  • 1/4 C. olive oil
  • 1 Tbs. chopped rosemary
  • salt
  • pepper
  • 2 garlic cloves, finely chopped

Directions

Preheat the oven to 400 degrees. Scrub potatoes old cold running water, then peel them. Cut the potatoes into 1-inch pieces. Dry them with paper towels, then put them in a large roasting pan. Drizzle with oil and toss with rosemary and salt and pepper to taste. Spread the potatoes out evenly. Roast the potatoes, stirring every 15 minutes, for 45 minutes. Stir in garlic and cook for another 15 minutes. Serve.
