Island Chicken Salad

With mango chutney, water chestnuts, pineapple, grapes, and more

Ingredients

  • 2 C. mayonnaise
  • 1 Tbs. curry powder
  • 2 1/2 Tbs. soy sauce
  • 2 Tbs. fresh squeezed lemon juice
  • salt to taste
  • 1 Tbs. fine chopped green onion
  • 1 Tbs. chutney (I use either Crosse & Blackwell's or Sharwood's "Major Grey Mango Chutney")
  • 3 C. cooked chicken breast (cubed) (*season with lemon pepper before
  • cooking)
  • 1 8oz. can sliced water chestnuts (well drained)
  • 1 20oz. can pineapple chunks (well drained)
  • 1/2 lb. sweet seedless grapes
  • 1 C. chopped celery

Directions

Toss all ingredients together. Chill several hours or overnight. Serve on Bibb lettuce. Serves 6.
