Island Chicken Salad
Ingredients
- 2 C. mayonnaise
- 1 Tbs. curry powder
- 2 1/2 Tbs. soy sauce
- 2 Tbs. fresh squeezed lemon juice
- salt to taste
- 1 Tbs. fine chopped green onion
- 1 Tbs. chutney (I use either Crosse & Blackwell's or Sharwood's "Major Grey Mango Chutney")
- 3 C. cooked chicken breast (cubed) (*season with lemon pepper before
- cooking)
- 1 8oz. can sliced water chestnuts (well drained)
- 1 20oz. can pineapple chunks (well drained)
- 1/2 lb. sweet seedless grapes
- 1 C. chopped celery
Directions
Toss all ingredients together. Chill several hours or overnight. Serve on Bibb lettuce. Serves 6.
