  • 2 lemons
  • 3 lg. garlic cloves, minced
  • 3/4 C. minced fresh parsley
  • 1 lb. angel hair pasta
  • 2 Tbs. olive oil
  • 1 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 6 Tbs. grated parmesan cheese

Grate zest from lemons. In a small bowl, combine zest, garlic and parsley. Set aside. Cook pasta in a large pot of boiling water until tender but firm. Should take 3-5 minutes. Meanwhile, in a large frying pan, warm olive oil over medium-low heat. Add original mixture and salt and pepper. Cook 1 minute. Drain pasta and pour into a pan. Toss to coat. Sprinkle cheese on top.
