Italian Beef Stew

Ingredients
- 3 lbs. lean beef, cut into lg. cubes
- 1/4 tsp. nutmeg
- 1/4 tsp. thyme
- 2 bay leaves
- 1 garlic clove, sliced
- 2 C. dry red wine
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 onion, diced
- 2 garlic cloves, chopped
- 1 Tbs. lard
- 1/2 C. water
Directions
Combine all ingredients except onion, garlic, lard and water, and marinate for 4 hours. When ready to cook, brown the onion and 2 chopped garlic cloves slowly in 1 Tbs. lard in stew pot. Add the marinated meat, reserving marinade and let it brown slowly and thoroughly. Strain the marinade and add to the meat 1/4 C. at a time, letting this evaporate before adding the next liquid. Then add water, cover and cook about 1 hour.
