Italian Braised Chicory

Ingredients
- 2 sm. heads chicory
- 3 Tbs. olive oil
- 1 garlic clove, sliced
- 1/2 tsp. chopped basil
- 1/4 tsp. chopped mint leaves
- 1/2 tsp. salt
- 1/2 tsp. pepper
Directions
Cut off chicory stems, wash well and shred. Place in a stew pan with oil, garlic, basil, mint, salt and pepper. Cover pan and cook over low flame for 1 hour. Stir occasionally.
