Chicory has long been used in savory dishes throughout Italy and Greece.

Ingredients

  • 2 sm. heads chicory
  • 3 Tbs. olive oil
  • 1 garlic clove, sliced
  • 1/2 tsp. chopped basil
  • 1/4 tsp. chopped mint leaves
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions

Cut off chicory stems, wash well and shred. Place in a stew pan with oil, garlic, basil, mint, salt and pepper. Cover pan and cook over low flame for 1 hour. Stir occasionally.
