Italian Bread Salad Stuffed Tomatoes

A yummy way to stuff your tomatoes.

Ingredients

  • 4 medium tomatoes
  • 1 1/3 C. dry Italian bread cubes
  • 1/3 C. chopped cucumber
  • 1/3 C. chopped celery
  • 2 Tbs. sliced radishes quartered
  • 1/3 C. vegetable oil
  • 2 tsp. red wine vinegar
  • 1/4 tsp. tarragon leaves crushed
  • 1/4 tsp. salt
  • Pinch of garlic powder
  • Pinch of ground black pepper

Directions

In a large bowl place bread, cucumber, celery and radishes. Combine oil, vinegar, tarragon, salt, garlic powder and black pepper: pour over bread mixture. Toss to coat evenly. Chill for 30 minutes. Turn tomatoes stem side down. Cut each tomato part way threw in to 6 wedges: gently open to form a star. Spoon 1/2 C. of the bread mixture in to each tomato. Garnish with parsley, if desired.

Yield: 4 Servings.
