Italian Bread Salad Stuffed Tomatoes
Ingredients
- 4 medium tomatoes
- 1 1/3 C. dry Italian bread cubes
- 1/3 C. chopped cucumber
- 1/3 C. chopped celery
- 2 Tbs. sliced radishes quartered
- 1/3 C. vegetable oil
- 2 tsp. red wine vinegar
- 1/4 tsp. tarragon leaves crushed
- 1/4 tsp. salt
- Pinch of garlic powder
- Pinch of ground black pepper
Directions
In a large bowl place bread, cucumber, celery and radishes. Combine oil, vinegar, tarragon, salt, garlic powder and black pepper: pour over bread mixture. Toss to coat evenly. Chill for 30 minutes. Turn tomatoes stem side down. Cut each tomato part way threw in to 6 wedges: gently open to form a star. Spoon 1/2 C. of the bread mixture in to each tomato. Garnish with parsley, if desired.
Yield: 4 Servings.
