  • 8 center cut pork chops
  • 3 C. Italian bread crumbs
  • 3 eggs
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbs. garlic powder
  • 2 C. carrots, sliced
  • 1 C. celery, sliced
  • 1 C. onions, sliced
  • 1/4 C. olive oil

Preheat oven at 350 degrees F. Beat eggs in bowl. Dip pork chops in egg mixture. In a plastic bag, add bread crumbs, salt, pepper and garlic powder. Add each pork chop to the mixture, one at a time, and shake well until coated on both sides. Place in hot greased frying pan. Brown lightly on both sides and arrange in large baking dish. Put mixed vegetables on top of chops and bake for 60 to 75 minutes.
