Italian Cheese Pie

This is VERY easy to make and tastes like a cross between a canoli and cheesecake. Wonderful to use over the holidays or to finish off a wonderful Italian dinner.

  • 1 lb. ricotta cheese
  • 4 eggs
  • 1 C. sugar
  • 1/2 C. heavy cream
  • 1 tsp. vanilla
  • 1 Tbs. almond flavoring
  • 1 frozen deep-dish pie shell
  • 1 Tbs. slivered almonds

Separate one egg. Brush white on bottom of pie shell, brush yolk around edge of shell. Mix all ingredients well and pour into pie shell. This can also be put into smaller individual shell cups. Put a few slivered almonds on top center. Bake at 375 degrees 50-60 minutes or when wooden toothpick comes out dry. Bake about 20-25 minutes if using individual shell cups.
