Italian Chicken and Potatoes
Ingredients
- 1 whole baking chicken, 7-8 lb.
- Italian spices
- Garlic powder
- Olive oil or regular vegetable oil
- 8 potatoes, sliced very thin
- 1 C. of milk
- Margarine or butter
Directions
Preheat oven 400 degrees. Take the 9x12 glass baking dish and use a paper towel to rub butter or margarine all over the inside of the baking dish. Next, slice the potatoes very thin and cook them in water, adding the milk also. Boil and remove them from heat when they are almost done. Drain. Layer the potatoes into the baking dish and sprinkle each layer with garlic powder and Italian spices. Take the whole chicken, rinse and remove the giblets and neck. Place the chicken on top of the potatoes and season with the olive or vegetable oil, then Italian spices and garlic powder to taste. Put it all in the oven and cook until the chicken is completely done. Remove the chicken from the potatoes and put the dish back in the oven to brown the potatoes to your liking. When done, remove and serve with the chicken.
