Italian Chicken in Balsamic Vinegar
Ingredients
- 8 cloves garlic
- 1 onion, perferably red but yellow will work
- 6 Tbs. extra virgin olive oil
- 28 oz. crushed tomatoes
- 1/4 C. balsamic vinegar
- 1 Tbs. dried basil
- 1/4 tsp. salt
- 1/2 tsp. ground pepper
- 4-5 skinless chicken breast
Directions
In a skillet, saute onion and garlic in 4 Tbs. of extra virgin olive oil on low until light golden brown. In separate large skillet with 2 Tbs. of olive oil fry the chicken breast until browned on both sides. Add onion and garlic to chicken in large skillet. In bowl mix crushed tomatoes with basil, salt, balsamic vinegar and black pepper. After mixed really well, pour over chicken, onoin and garlic. Stir in well making sure it is covered with sauce. Cook on simmer for 35-40 minutes. Plate chicken and top chicken with sauce.For a side dish I recommend steamed green beans with onions with a pinch of black pepper. Serve green beans on the side.
