  • all of the biga naturale, cut into small pieces
  • 3 C bread flour
  • 1 1/8 C water
  • 4 tbsp all natural honey
  • 1 tbsp almond extract
  • 4 tbsp cocoa powder
  • 1/4 tsp instant yeast
  • 1 tbsp kosher salt
  • 2.75 oz chocolate chips (added towards the end of kneading)

Begin by mixing all the ingredients together, except the chocolate chips.  Knead for about 8-10 minutes.  Then let the dough rest for about 5 minutes.  Add the chocolate chips and knead again until the chips are mixed in well.  Let the dough ferment for about 2 hours at room temp.  It should double in size.  Split dough in half and place of parchment paper. Cover with a lightly oiled plastic wrap and final proof for 3 hours at room temperature. Now preheat your oven to 400 degrees, and make about 3 slashes over to the top of each dough ball.  Bake for 20 minutes and rotate bread around if necessary. When done the bread should be hallow.  Cool for about an hour or so.  Cut up and enjoy.
