This delicious Italian cookie recipe uses ricotta cheese!

Ingredients

  • 2 C. sugar
  • 2 sticks real butter, softened
  • 3 eggs
  • 1 lb. ricotta cheese, whole milk
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 tsp. vanilla
  • 4 C. flour
  • Icing:
  • 1 stick butter, softened
  • 1/2 bag confectioners' sugar
  • 1/4-1/2 C. milk

Directions

Preheat oven to 350 degrees. Cream sugar and butter together. Add eggs. Add ricotta cheese and mix. Add baking powder, baking soda and vanilla. Gradually add flour.

Drop by tablespoonfuls on an ungreased cookie sheet. Bake at 350 degrees for 15 minutes. Remove from cookie sheets immediately. Let cool.Mix icing ingredients and ice cookies after they are cooled.
