I'm not a great griller, but every once in a while the master grillers in my family let me try something new and creative. Try this recipe on the grill to surprise your family or guests with your skills. Dip the meatballs in sauce or serve with pasta.

  • 1 1/2 C. crustless cubed white bread
  • 1/4 C. milk
  • oil
  • 2 strips raw bacon, finely chopped
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 1/2 lb. ground chuck
  • 1/2 lb. ground pork
  • 1 C. grated Parmesan cheese
  • 2 Tbs. fresh parsley, chopped
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. dried basil
  • 1/4 tsp. dried oregano

In a large mixing bowl, combine the bread and milk and let sit for 5 minutes. Squeeze the milk out of the bread and throw away the milk. Put the bread back in the bowl. Heat a frying pan over medium heat and put 1 tablespoon of oil in it. Add the bacon, garlic, and onion and saute for 5 minutes, or until the onion is clear. Add the bread to this mixture and let it cool. add the ground chuck, ground pork, parsley, salt, pepper, Parmesan, basil, and oregano. Combine the ingredients with your hands. Oil your hands with oil and form the meat into 1 1/2 inch balls. Start the grill on Smoke with the lid open for 4 to 5 minutes. Set the temperature to 350 degrees, or Gas Mark 4, and preheat with the lid closed for 10 to 15 minutes. Arrange the meatballs on the grill grate and grill for 25 to 30 minutes or until cooked thoroughly. Let them rest for 5 minutes before serving.
