Italian Grilled Onions

These onions go great as a side dish for any main course, or you could layer them on burgers and sandwiches, too!

  • 1 lb. purple onions
  • 2 Tbs. olive oil
  • 1 Tbs. balsamic vinegar
  • 1 tsp. fresh rosemary, minced
  • 2 Tbs. fresh parsley, minced
  • 1/2 tsp. oregano
  • 1 tsp. black pepper
  • 1/4 tsp. salt

Mix together oil, vinegar, rosemary, parsley, oregano, pepper, and salt in a glass dish.  Cut onions into slices and place them in the dish, as well.  Turn them to coat them with marinade mixture.  Place onions on a grill and cook until just tender.
