If you don't want to cook your vegetables directly on the grill, this foil packet grilling recipe is for you. You can cook any vegetable you'd like in it and it is easier to handle than direct grilling. The vegetables come out tender and delicious, with minimum effort. Serve them in a nice dish for easy access.

  • 1 large red bell pepper, cut into pieces
  • 1 large eggplant, sliced
  • 1 large yellow pepper, cut into pieces
  • 1 yellow squash, sliced
  • 1 onion, chopped
  • Italian dressing
  • salt and pepper, to taste

Toss the vegetables in as much Italian dressing as desired and sprinkle with salt and pepper. Tear a large sheet of heavy duty foil and scoop several handfuls of the vegetables into the middle. Fold the long sides of the foil together in an accordion or pleat fold and fold the short ends over to close the packet tightly. On a hot grill, cook the packets for 10 to 15 minutes. Turn the packet over halfway through the time. Careful when opening, since there will be steam.
