Italian Herb and Cheese Pasta Side Dish
- 1 sm. pkg. spaghetti
- extra virgin olive oil
- fresh oregano
- fresh basil
- fresh grated Parmesan or Asiago cheese
- garlic salt
- kosher salt (optional)
- Sun dried tomatoes in a jar – chopped to taste (optional)
Remove oregano leaves and basil leaves from stems, discard stems. Chop oregano until medium fine. Roll up basil leaves, slice and then chop until medium fine. Boil spaghetti according to package directions. Drain, DO NOT RINSE!
While pasta is still warm, in a large bowl, toss pasta with olive oil – to your liking. Add garlic salt, pepper and kosher salt to taste. Continue to toss as you add a handful or two of each fresh herb. Toss in cheese to your liking. Add sun dried tomatoes and toss (optional). Serve warm.
To reheat, add more olive oil and heat in microwave for 30-60 seconds, adding more cheese if needed.
