Italian Herb Potato Salad

Ingredients
- 1 medium sized potato for each person you intend to serve
- salt
- pepper
- fresh garlic cloves
- oregano
- fresh basil
- virgin olive oil
- red wine vinegar
Directions
Boil potatoes in jackets until tender but not mushy. Save about 1/2 cup of the water. Peel and quarter, then cool to room temperature. Add salt and pepper to taste. Add 1 clove of garlic per 3 potatoes (i.e. 10 potatoes use 3-4 cloves of garlic). Mix oil and vinegar and fresh or dried herbs to taste in a bowl. This makes the dressing. Pour over cooled potatoes. Use some of the cooled potato water to thin dressing if necessary.
