You have to let the mussels marinate for 3 days if you really want them to taste good.

Ingredients

  • 2 lbs. mussels with shells
  • 2 Tbs. olive oil
  • 1 garlic clove
  • 5 anchovy fillets, chopped
  • 1 1/2 C. dry white wine
  • 1 1/2 C. vinegar
  • 1 Tbs. chopped parsley
  • dash cayenne pepper

Directions

Open mussels, wash in salt water and drain. Brown garlic in oil, remove from oil and add mussels and anchovies. Keep heat low and add wine and vinegar. Simmer until liquid is half of what it was originally. Add parsley and cayenne. Remove mussels and marinade. Place in a container and allow to marinate for 3 days.
