Italian Oyster Mushrooms

Ingredients
- 1 lb. oyster mushrooms
- 2 Tbs. olive oil
- 2 garlic cloves, finely chopped
- 2 shallots, finely chopped
- 8 oz. Italian sweet pork sausages
- 1 pinch salt
- 1 pinch crushed red pepper
- 1 C. peeled, seeded and chopped tomatoes

Directions
Wipe mushrooms with dampened paper towels. Tear the mushrooms into thin strips along the gills. Pour oil in a skillet. Add garlic and shallots and cook for two minutes. Stir in sausage and cook until browned. Add mushrooms, salt to taste, crushed pepper and stir. Add tomatoes and 1/4 C. water. Bring to a simmer. Turn heat to low and cover the pan. Cook, stirring occasionally, 30 minutes. Serve.
